Our Kombucha

Flavours

AVAILABLE IN 1L GROWLERS OR 355ML BOTTLES

If you’re new to kombucha or on the fence, you should know that we have many a skeptic turned convert among our customers! We’ve crafted our flavours to best showcase our unique ingredients, including several wild plants that we harvest ourselves (staghorn sumac cones, eastern white cedar fronds, candy, swiss and spear mints, and young spring spruce tips). All of our kombucha starts with a custom blend of loose leaf organic green and black teas, organic cane sugar, and our own live kombucha culture (sometimes called a SCOBY). We precisely ferment each batch, then flavour with high-quality whole fruits and botanicals blended directly into the kombucha. Once flavoured, we ferment the mixture a second time to ensure a perfect sippable balance in every bottle. This method delivers intensely delicious and nutrient rich buch on a completely different level than kombuchas flavoured with concentrates, juices, tea blends, or “natural” flavours.  Lastly, we filter and lightly carbonate, leaving behind living beneficial probiotic and prebiotic yeasts and bacterias in every bottle.

Blackberry Sumac

Think of this kombucha as a wildcrafted Ontarian pink lemonade. Even if you’ve never tasted sumac before, you’ve probably seen it’s red, velvety cones at the sides of Southern Ontario’s country roads and highways. Rich in Vitamin C and A, it adds the perfect amount of citrus-y zip to a lush backdrop of summery blackberries. It’s tangy, refreshing, and perfect for sipping outdoors.

Made with pesticide-free blackberries from Mathias Farms in Ridgeville, Ontario and personally foraged organic staghorn sumac from Baba Link Organic Farms in Flamborough, Ontario.

Blueberry Mint

A truly terrific flavour combination - pesticide free Ontario wild blueberries meets a blend of organic mints for the ultimate in refreshment.

Made with wild blueberries from Cherry Lane in Vineland Station, Ontario and organic Spearmint, Candy Mint, and Swiss Mint from Baba Link Organic Farms in Flamborough, Ontario.

Lemon Ginger

An absolute kombucha classic, and the only flavour for which we’re willing to go outside of Ontario for our flavouring ingredients. If you have a family member or friend who’s not crazy about kombucha, but loves lemonade or ginger beer, this is the flavour to start them with. We use whole bright lemons and spicy fresh ginger in careful proportions, really allowing our custom blend of black and green tea from Lemon Lily Tea in Toronto to shine.

Raspberry Lavender

Fragrant, floral, and sweeter than summer - this flavour is uplifting and magical solo or in mixed drinks. Not to mention that stunning colour. Treat yourself without regrets.

Made with pesticide-free raspberries from Mathias Farms in Ridgeville, Ontario and whole dried French lavender buds from Weir’s Lane Lavender in Dundas, Ontario.

Sour Cherry Cedar

Don’t let the cherry species fool you - this flavour is not so much sour as it is tart and crisp. We hand forage our own Eastern White Cedar fronds, which are rich in Vitamin C, and have a cooling, almost mint-y quality that we love. Try it solo or in a gin-based cocktail for a unique and luxurious drinking experience. It’s really tough to pick our favourite flavour, but if we could only choose one, this might very well be it.

Made with sour cherries from Cherry Lane in Vineland Station, Ontario and foraged organic cedar from Baba Link Organic Farm in Flamborough, Ontario.

Rhubarb Rose

Rhubarb is one of Ontario’s best spring crops, and this combination of early-season rhubarb with local wild rose petals is delicately dry, complex, and subtle. This is one of our favourite ever seasonal recipes, so we’ve made it available out-of-season while ingredients last!

Made with organic rhubarb from Baba Link Farm in Flamborough Ontario and wild rose from a variety of sources, including Sunfire Herbals in Burlington Ontario.

Cranberry Spruce Tip

A customer favourite that started out as a holiday seasonal! Every spring we forage for new growth spruce tips, which have a lovely citrus flavour, and freeze them to use in this winter special. It’s low sugar, sippable, probiotic, and oh so much better than cranberry sauce.

Made with cranberries from Johnston's Cranberry Marsh in Bala, Ontario and foraged organic spruce tips from various sources in Ontario.

Peach Rosemary

This local pairing is the perfect end-of-summer transition into harvest flavours - our favourite August seasonal is now available in 355mL bottles as well as growlers, as long as ingredients last!

Made with fresh rosemary and R.C. Haist peaches, this local pairing is the perfect end-of-summer transition into harvest flavours.

Past seasonals include:

Seaberry Smash

Seaberry Smash features juicy tropical and citrus flavours, but made with Ontario ingredients! We’ve made a blend of seaberries (a.k.a. sea buckthorn), organic lemongrass, ginger, and turmeric. Not only is it absolutely delicious (Robyn claims it is reminiscent of Sunny-D), but it's super healthy as well, containing a wealth of antioxidants, Vitamin C, and anti-inflammatory properties.

Cucumber lemongrass

Cool, refreshing and tangy, this is no regular cucumber water! We recommend trying it in a cocktail with tequila (or another light-coloured spirit), lime and salt. Made with locally grown greenhouse cucumbers, Sunfire Herbals lemongrass, and a hint of ginger.

Sea Buckthorn Thyme

Sea buckthorn, sometimes called seaberry, has a bright & tart flavour reminiscent of orange, mango and pineapple. We paired these little orange wonders with Sunfire Herbals lemon thyme for a subtle, savoury depth that takes it to the next level!

Red and Black Currant

Made with red currant berries and the branches from black currant bushes, this unique tea blend creates a jammy & tart seasonal special, perfect for an after dinner sip with dessert.

Strawberry holy basil

A special blend of Fenwick Berry Farms strawberries, Sunfire Herbals’ holy basil (tulsi), and pure kombucha magic. Strawberry Holy Basil (branded as Unholy Strawberry) is now EXCLUSIVELY available at Coven! Stop by their shop to pick up a bottle today!

pear hops

Made with little green Asian pears from Baba Link Farms and Sunfire Herbal’s hops - the tart pear and the bitter hops make it the perfect non-alcoholic fall cider.

PINEAPPLE-SAGE TEPACHE

Tepache is a lightly spiced fermented beverage made from sweetened pineapple rinds. It was first made by the Mayan and Nahua people in what is now known as Mexico, and was a sacred drink, with different spices being added based on its intended use.
This is our kombucha adaptation of a centuries old favourite. In order to keep it local, we're using Sunfire Herbals pineapple sage, a tropical sage plant with loads of pineapple flavour. Add to that whole cinnamon and star anise, and you've got a refreshing, pleasantly spiced brew that's perfect to herald the fast approaching summer!

Wild Grape

We've been wanting to make this one for a long time, and it's everything we dreamed. Bright, complex, smooth, tart, sweet, SO refreshing; really just all of the good kombucha words. Usually we use two flavouring ingredients in harmony, but the early wild grapes foraged at Baba Link Farm are so fantastic that they need no help.

Plum Cardamom

Inspired by our favourite fall jam, this is a blend with equal helpings of sweetness and warmth. Made with local Italian plums from R. C. Haist Farms and whole green cardamom pods, this kombucha is bright, warm, spicy, tart and sweet all at once.

Lilac Lemonade

We're continuing the spring floral theme for our next special, combining foraged feral lilac blooms with local Sunfire Herbals lemon verbena and Fairly Frosted salvaged lemon juice. The result is lightly floral and lusciously lemony: the perfect refreshment on an early summer morning.

turmeric chai

For fans of golden milk, chai lattes, and kombucha (obviously). Cardamom, cinnamon, nutmeg, black peppercorn, cloves, vanilla, ginger & loads of fresh turmeric add warmth and spice to the natural black and green tea flavour of our kombucha.

Rosehip Hibiscus

Sweet, floral, and made with love - as well as Sunfire Herbals rosehips and hibiscus petals.

RED CURRANT CHAMOMILE

Organic red currants from Baba Link Farm and chamomile from Sunfire Herbals make for a calming, easygoing blend best drunk outdoors on a warm summer evening.

GOOSEBERRY PINEAPPLE SAGE

Gooseberries are known for fermenting excellently and they lived up to their reputation! Combined with pineapple sage (a tropical sage variety that really does taste like pineapple), they make for a tangy 'buch that'll have you thinking island beaches, but with all local ingredients!

MAPLE JALAPENO

Sweet, smokey, with a perfect bit of kick to it! Made with seeded jalapeno peppers and Deerfield Farm's darkest maple syrup for the best flavour possible.

spruce tip lemon verbena

Available while ingredients last only! Made with freshly harvested spring spruce tips and Sunfire Herbals’ lemon verbena, we can guarantee this will be the most refreshing, citrus-y drink of your summer with no actual citrus!

Pineapple Fury

There’s a ton of synergy in the making of kombucha and fermented hot sauces, and this collab with fellow Kitchen Collective member Fury Hot Sauce is 🔥. We’ve brewed a batch of our classic kombucha flavoured with their Pineapple Yardie (habanero) hot sauce for a spicy, fruity, and totally original combo. Pairs amazingly with ice cream in a float, or rum for a seriously sexy cocktail!

haskap honey

Haskaps are sometimes known as honeyberries, and paired with Sheffield Acre’s delicious honey, they make a kombucha bursting with the full, fruity sweetness we previously thought was reserved for port.

Ginger Spice Pear

Crisp like the late autumn/early winter morning air, and lightly spiced, this flavour is a sweet transition between the seasons, just like the end of November has been. Made with Ginger Spice pears from Baba Link Farm and freshly grated Ontario ginger (from Fisherville!)

Strawberry Magnolia

Made with freshly foraged pink magnolia blossoms and local strawberries. If you've never experienced the taste of magnolia, it's an incredible edible flower with subtle notes of ginger, thyme, and cardamom, a.k.a a perfect compliment to the pure goodness of ripe strawberries.
